It's a way of life....

HAPPY VALENTINE'S DAY <3

I learned today that my HCG and my weight loss is a way of life not just a diet. Not only have I loss some weight.. but I also have learned to make better decisions and make better selections of the ingridents in which I put in my body. Today due to a co-workers birthday and Valentine's day dinner.. I ate out twice today. Here is what I had:

For lunch: We went to Chilis. I had the Old Timer hamburger. Ordered exactly like this: Can I have the old timer cooked well done and with no extra oil or butter and no cheese or mayo? Instead of fries can I have a salad with no carrots, cheese, or croutons? I will take salsa for a salad dressing. And a water please? The salad was more than 2 cups so I scooped off what I thought was too much. I knew my burger was a 1/2 pound patty so I cut it in half.. slathered it in mustard and ate just the patty while the bread and such sat on the side. Success #1. I did have a small bite of a brownie but didn't cave on the chips and salsa. Also to include 4 cups of water.  

For dinner: We had mexican. My weakness. I ordered Spinach Enchiladas. It was Valentine's day and I wanted to splurge a little. I had a few chips with salsa and a couple dibs in the queso. Nothing compared to what I used to eat. I ate only one spinach enchiladas which had no cheese but did have a sour cream sauce on it. I scraped most of the sauce off where there was just a hint of it and covered in it pico de gallo. It came with sauteed vegetables.. which again had a little oil and such but not as bad as rice and beans. It came with a bowl of charro beans which I gladly took one little bite and pushed them away. Also to include 2 giant glasses of water. No dessert.

While my entire day was not HCG friendly and might make me gain.. I am proud of the choice I made. It really shows I have come along way in a short period of time. Not only is it a diet and about losing weight to me.. Its about a lifestyle change and I am proud to be sticking to me guns! Go me :-)

Never Never Never Give up

"Never Never Never Give up" is my motivating quote of the day. Today it the start of my 7th week on the www.affordablehcgdiet.com diet. Yesterday was a good day. I spent it at home doing a whole lot of nothing but eating good.

Breakfast: Egg and Bacon
Lunch: salad with baked greek chicken and Walden Farms Honey Dijon (which I had to fix up)
Dinner: some leftover scallops that didn't quite equal 3.5 oz and a piece of Swai that didnt quite equal 3.5 oz and some lemon garlic roasted asparagus
Dessert: sauted apple with Walden Farms Caramal syrup and cinnamon and a tad of stevia

Who can complain with a day of eating like that? Maybe I should stay in more on the weekends... I do much better :-)

I am down 1.8 today. Cant complain. I figured I was going to gain today due to having a dinner on thursday night and I had a few pieces of Sushi. (OMG it was SO SO SO good)

The reason why "Never Never Never give up" is my quote of the day is because I almost did have a :give up" moment this past week. Here is my weight loss for the last week:

I was so incredibly unmotivated this week. due to these losses and gains I know a huge portion of that gaining was due to TOM visiting but I was on the verge of giving up. I had told my sister on Friday morning (we talk every morning as she is doing the Affordable HCG Diet as well) that I was about to give up. She told me to keep it up and that I normally have a big loss on Saturday. She mentioned that I had been on the diet for 6 weeks and maybe I needed to take a break. I had made up my mind that if I didn't have a big loss yesterday that I would go off the diet for a week. WOW does God work in mysterious ways. This morning I am under 235 and I couldn't be more excited!

I ordered my second bottle of HCG drops yesterday.... Its on baby!

Going to donate 2 bags of clothes to the Thrift Store today that DONT fit anymore and hopefully find me some smaller work pants. Yeah.. who is on the loser train with me?!?

From Gourmet Gone Fast to Fat Girl Gone Skinny

I began this blog a few years ago and initally titled it Gourmet Gone Fast. I love to cook.. its a hobby an obsession and something I truely enjoy. Along with cooking... I truely enjoy eating. When I graduated from high school I weight 198. I was my happiest at that weight. Was it the "doctor recommended idea weight" well heck no.. but I was happy. Over the past years in the mix of being married, going to school, working my butt off, etc. I became a huge fan of quick meals on the go, most of which were fast food which caused me to gain a wopping 60 POUNDS! UGH puke! The last year was hard to focus on my weight.. I went through a divorce. The last thing I wanted to eat was some strawberries when i could have a 1/2 gallon of ice cream that would make me feel much better.

That however... was the old me.... now on to the new me. My sister Annette experiemented with the Affordable HCG Diet www.affordablehcgdiet.com last year. She lost a ton of weight and has kept it off. She is smokin hot :-) I have always wanted to get back to where I used to be. Its not easy. Working out for me is impossible! I have a heart disorder called Bradycardia. In order for me to get cardio enough to where i can loose.. I would need to get my heart rate up to 120 bpm. That is impossible... my resting heart rate is in the 40s and can typically only get it up in the 80s and 90s. I wanted to loose weight for me. I needed something to make me feel better about myself after going through a divorce just didnt know what. I knew I COULDN'T do the HCG diet with the whole 500 calorie thing. Wow was I wrong.....
My journey began December 30th, 2011 shortly after hearing about my dad having a heart attack and 12 days prior to my mom having gastric bypass. I had made up my mind that I was not going down that route no matter the situations. PERIOD. I had spent an evening at my sisters and we got to talking about weight loss. She gave me everything I needed to start the HCG diet (a full bottle of drops, B 12 vitamins, a case of Miracle Noodles, and her handy suggestions). I had made up my mind at this point that it was going to happy no matter what. I began my loading phase on the 30th and completed on the 31st to begin my phase 1 on the first day of the new year.
January 1, 2012: 259.0 pounds
Today is February 11, 2012: 236.2 pounds and I am down a total of 22.8 pounds!!!!
This is my new blog. Its my new lifestyle. Its the Fat Girl Gone Skinny way! I will include not only updates on my HCG experience and trials but also my daily life adventures. The Fat Girl Gone Skinny is not just about a weightloss journey.. its about a new and deveoping journey of me. Stay tuned for before and after pictures and some recent recipes.

Celebrating Our Veterans!

In support of Veteran's Day, I made this cake. Brad was having a a meeting for his PAC The Collin County Conservative Movement for Veteran's Day. In honor of Jerry Madden, a very well respected Texas House of Representative member, I decided I was going to make a USA cake to express my thanks to the veterans that would be attending the meeting.


Needless to say... this was interesting. I have never actually attempted to make a decorated designed cake. Normally I make a sheet cake and put icing on it, never caring what it looks like because it is after taste after all. However, when you are making a cake for a Texas House of Representative member, there is just a little pressure for presentation and taste.


I made this cake by hand. I cut each letter by hand and iced everything by hand!


Needless to say.. Bradley made numerous trips to Walmart for more stuff while I stayed up until 2:00 in the morning decorating this cake.


Everyone at the meeting was amazed that I took the time to do this and thought it was delicious.

96 Cent Hummes




Over the last year or so I have become terribly addicted to Hummus. Seriously no one would understand my addiction... Including my own husband. Hummus is just one of those things that is so easy, so healthy, so filling, and just so GOOD! Now that we have gotten over the fact that I love hummus so much I will go on about what this blog is actually about.


As I have become addicted to it, my addiction has become expensive. Paying $3.00 to $4.00 per container of hummus I think is outraged. Who could seriously charge so much for some garbanzo (chickpea) beans, tahini paste, whatever flavoring inquires them, maybe some lemon or garlic, and olive oil. I mean what a profit they are making charging people $3.00 or $4.00 for a container of hummus that they could eat in one sitting. People are crazy!


As an attempt to become self sufficient, I decided to inquire about making my own hummus. After finding numerous and numerous recipes online that all required "tahini paste" (sesame seed paste) as a main ingredient I was a tad bit bummed. Tahini paste is another one of those mystery ingredients that tends to cost a fortune. I am however, not willing to pay the $6.89 cents per bottle of tahini paste to make my own hummus. On to another solution.


I started with a can of chickpeas that cost me a whopping .50 cents in the food processor. I added the juice of 1 lemon that cost me .33 cents. I added 3/4 cup of olive oil (not sure how much this cost since I buy it in bulk, so we will count this as free.) I added 2 tbsp of toasted sesame seeds that cost me .08 cents at Central Market. You must add the sesame seeds, it gives the hummus the sesame seed taste but without the cost of the $6.89 cent tahini paste. I added salt and pepper and 2 cloves of garlic chopped. A whole clove of garlic cost .50 cents so two cloves probably cost 8 to 10 cents. Blended well in the processor. Placed in a bowl with dried parsley, Cayenne pepper, and additional olive oil for drizzle. So needless to say I made hummus for .96 cents and let me tell you I am forever an "anti-store bought hummus" lover.


Needless to say the purpose of this post was to not only inform you how easy you can make your own hummus, but to also advise you to not fall in the trap of prepared foods. You can easily make something at home, just as tasty, and be able to control the ingredients for one third of the price of the shelf stable prepared foods you find today in today's super markets.


So to the old store bought hummus OUT and homemade fresh hummus IN!

P.S. Trying putting anything and I mean anything to change up varieties. Here are a few suggestions:


Blue Cheese Hummus with walnuts

Spinach Artichoke

Vegetable Hummus (bell pepper, onion, etc.)

Ranch Hummus (add a package of Hidden Valley Ranch dried dressing)

Olive Hummus (do a mixture of black, green, kalamata olives)

Roasted Red Pepper Hummus

There are endless options in making hummus! Pick a new one each week and you will never run out! Enjoy!
